Have you ever wanted something to eat just like your mother used to make? I think we all have from time to time. I like meat loaf occasionally, and I could never make it the way good ol’ mom made it. I tried several recipes and finally decided to make my own as a solution to the flavors and taste I wanted. The following is my original recipe and I hope you will try it and perhaps you will enjoy it as much as we have.

ANNE’S MEAT LOAF

Ingredients

1 lb. ground round

2 Johnsonville mild pork sausages, casings removed

1 can diced green chilies, drained (size is optional, 2 oz. or 4 oz.)

2 Tbsp. diced onion, dried variety

1 Tbsp. parsley flakes

1/4 cup breadcrumbs

1/2 tsp. salt

1/4 tsp. pepper

2 Tbsp. tomato sauce

Dash garlic powder

Another 2 Tbsp. tomato sauce for top

Mix all ingredients in a large bowl. This fills half a loaf pan. I use heavy duty foil wrap, crinkled up but not in a tight ball, to fill the other half of the pan. If you want to fill the whole pan (to have leftovers for sandwiches) double the ingredients.

Cook at 350 degrees for 50 minutes; add the tomato sauce for the top and cook 10 more minutes. Remove from oven and let sit for five minutes. Slice fairly thick pieces so as not to crumble the meat.

Mashed potatoes or a baked potato are great accompaniments. Adding a green vegetable makes a pleasant presentation.
