Our weather sure has heated up! My motto for this time of year is: NO OVEN USE!
Salads are the ideal kind of meal and there are so many ways to please yourself or company. Spinach salad is one of my favorites with hard-boiled eggs and crisp bacon bits. But I like to change it up occasionally. One way is to use mango and cashews (chopped) instead of the usual egg and bacon. I have also tried orange slices cut in half and pecans. That is soooo delicious! – See picture!
Fruit salads are great for lunch or for dessert. Almost any kind of fruit will make a great salad. I like lots of color in my presentation. Suppose you like blueberries, blackberries, raspberries, some strawberries (halved) and honeydew melon (cubes). Of course, all kinds of melons make a good selection and, especially if you are having a get together, you can serve the fruit in the watermelon rind, just scoop out the melon and heap the cut-up fruit into the shelled melon rind.
Of course, if you want something a little “meatier”, there are chicken salad, tuna salad, shrimp salad, egg salad and cole slaw. Place a scoop of your favorite on a piece of Bibb lettuce (because it makes a little cup) and serve in the center of a plate surrounded by olives, cheese chunks, crackers, etc. Use your imagination. Stuff half an avocado or medium size tomato (cut almost all the way through into wedges) with chicken salad or your favorite choice.
