While reading the paper the other day I saw that the apple crop is starting to come in. It’s earlier than other years, but the quality of apples is much better. I present some apple desserts for your enjoyment and remember: “an apple a day keeps the doctor away!”
Apple Pie in a Dish
In a 2 qt. saucepot, cook the following ingredients for 20 minutes:
4 cups Granny Smith apples
½ cup Apple Juice
¼ cup Brown Sugar
½ tsp. Cinnamon
¼ tsp. Nutmeg
¼ tsp. Allspice
1 tsp. Vanilla Extract
2 tsp. Rum

1 cup graham cracker crumbs
2 cups Vanilla frozen yogurt or ice cream
Use parfait glasses for a great presentation!
3 tsp. apple mixture
2 tsp. crumbs
Ice Cream
Chocolate Sauce
Nuts
Whipped Cream
Don’t mix – just layer – ENJOY!
Apple Crisp or Apple Pan Dowdy
Run your cube of butter or oleo over the bottom and sides of a 2 qt. casserole dish.
Pare and slice 6 or 7 apples (I like yellow delicious). As you slice, sprinkle sugar and cinnamon on the apples throughout.
Topping: Mix in a separate bowl until crumbly:
¾ cup Flour
pinch Salt
½ tsp. Cinnamon
¼ tsp. Nutmeg
¼ cup reg. Sugar
¼ cup Brown Sugar
1 Tbsp. Oleo or Butter
Place crumbled topping over your apples.
Pour melted butter or oleo (about 2 Tbsp.) on top of the crumbled topping and sprinkle with cinnamon.
Bake at 350º for about 35 to 45 minutes. Check at 30 minutes because you don’t want it to burn; that will cause bitterness. If you use a glass (Pyrex) casserole dish use a 325º oven. Vanilla ice cream is great with this dessert served slightly warm.
